Whilst we’re definitely influenced by those old school brewers of yesteryear, the look and feel of our beers are undoubtedly planted firmly in the new school. Without the New England haze-craze brewers, there would be no Polly’s, and we’re paying homage to those world renowned breweries with Largo. When brewing this beer we upped the mash temperature ever so slightly to our usual, meaning we’ve been able to draw out more long sugar from our grain bill, resulting in a slightly higher starting gravity, and with that, a marginally sweeter finished beer. Paired up with a medley of new school hype-hops in Talus, Galaxy, Mosaic and a final lashing of Citra for good measure; expect to find gooseberries, pulpy tangerine, mango and papaya, backed up with an absolutely massive silky mouthfeel.
